Asian Bow Tie Pasta

I am always looking for a quick and delicious meals that my whole family can enjoy. This pasta salad recipe has become one of our favorites because it is so yummy and healthy. It gets some veggies in the kids’ bellies, and they don’t even complain about it! 

Asian Bow Tie Pasta: 450 calories per serving

1 lb whole grain bow tie pasta​​​​​​

¼ cup olive oil

⅓ cup soy sauce

¼ cup sesame oil

¼ cup honey

3 Tbs rice wine vinegar

2 red, yellow, or orange bell peppers, cut julienne

1 cup of scallions, diced

2-3 cups of rotisserie chicken, cut into bite sized pieces (put more chicken if you want meatier)

3 Tbs roasted sesame seed

Pepper to taste

3 cups washed baby spinach

¾ cup edamame

Cook pasta according to directions. Drain pasta and set aside. Add olive oil, soy sauce, sesame oil, honey, and rice wine vinegar to a pan over low heat until the honey is dissolved. Remove from heat and toss in the pasta. Add the bell peppers, chicken, scallions, edamame, pepper and sesame seeds. Toss well to coat all the ingredients. Before serving, toss the pasta with spinach. Enjoy!
