Lemon Arugula Pasta Salad with Pine Nuts Recipe

The 4th of July is this weekend and along with that comes lots of parties and bbq’s so I wanted to share another one of my favorite pasta salad recipes. This pasta salad is light and refreshing with vibrant flavors of lemon and basil. This recipe is super easy to through together and is one everyone loves! I hope you love it!

Lemon Arugula Pasta Salad with Pine Nuts

SALAD INGREDIENTS

  • – 1 box Campanelle Pasta [you could also use farfalle]
  • – 6 cups washed Arugula
  • – 1 cup Cherry Tomatoes [cut in half]
  • – 1/2 cup toasted Pine Nuts
  • – 1/2 cup shaved Sharp White Cheddar Cheese [you could also use parmessan]
  • – 1/4 cup Balsamic Glaze for drizzling [or more depending on your preference]
  • – Salt and Pepper to taste

DRESSING INGREDIENTS

  • – 1/4 cup Olive Oil
  • – 1/4 cup Red Wine Vinegar
  • – 1/4 cup Lemon Juice
  • – zest of 1 Lemon
  • – small bunch of fresh Basil
  • – 2-3 tablespoons Honey [according to your taste]
  • – Salt and Pepper to taste
  1. 1 | Cook pasta in salted water according to directions on the box. Drain when finished cooking and set aside.
  2. 2 | To make the dressing throw all ingredients into a blender and blend until everything is smooth.
  3. 3 | Toss the cooked pasta, arugula, tomatoes, and pine nuts in the dressing.
  4. 4 | Top with a drizzle of balsamic glaze, salt and pepper, and shaved white cheddar.
  5. 5 | Share and enjoy!

    ** Please note: I cook more according to taste than measurements so feel free to change up how much or how little you add of each ingredient. Also if you don’t have a certain ingredient or don’t like something feel free to change it up it bit. You really can’t go wrong 🙂
